The Fundamentals of Fermentation

Module Lessons Preview

In this module, we will study the following topics:

The Process of Fermentation: Fermentation is a cellular process that breaks down sugar molecules and produces energy, without the use of oxygen. This process is often used to make breads, beers, and wines. It can also be employed in preservation to create lactic acid in sour foods such as pickled cucumbers, kimchi, and yogurt. The science of fermentation is known as zymology. That will be the focus of the lesson ahead.

The Primary Role of Probiotics: Probiotics are a helpful form of bacteria that can help balance gut health. Basically, good microorganisms.

Pickling and Fermenting Foods: There are two main types of pickling. One that involves a heated process and one that relies on the fermentation of certain ingredients. Beyond the process is how it is canned. Storing your fruits and vegetables properly is important for safety and for taste.
